This Chicken Tortilla Soup is one of my favorites.

The nice thing about this recipe is that you can kind of change it up depending on your tastes. Spice it up or keep it mild, add more beans, more veggies all kinds of fun things.

If you have time, I suggest making the homemade tortilla chips. Lowry’s Season Salt is a good topping to put on them. They turn out really good.

I did this video on my Facebook Page when I was making the soup. I give a lot of great tips in here as well as how I make the recipe, so I encourage you to watch and pic up a couple new things.

Chicken Tortilla Soup Recipe  (It’s also Gluten Free)


2 Medium chicken breasts

1 Large onion, chopped

2 Tbsp minced garlic

1 Tbsp Avocado Oil

1 red, yellow or orange pepper, chopped

1 28oz Can crushed tomatoes (or whole tomatoes crushed by hand or blended)

1 Lime

1 Carton Organic chicken broth (Pacific is the brand I use)

1 Can black beans

2 Cups corn (fresh or frozen)

1 4oz can green chilis

2 Tbsp fresh cilantro

2 heaping Tbsp Taco seasonings (use the homemade)


Saute garlic in avocado oil for 1 minute, add chopped onion and saute for another minute. Squeeze lime juice into the pot and stir. Turn pot off and add in chopped pepper.

Blend can of beans with 1 C chicken broth if you don’t want the beans whole.

Mix all ingredients together and stir.

Place chicken breasts in the pot and close lid. (if you have shredded chicken, add it in and give a stir)

If you’re using an Instant Pot, set on manual for 20 minutes if using shredded chicken, set on 25 minutes if you’re using raw chicken breast, 29 minutes if your chicken is frozen.

Quick release if you want to eat it fast (which we usually do).
